Potato Nests

Active Time: 30 minutes Total Time: 1 hour Yields: 36 nests

Ingredients

• Nonstick cooking spray
• 3 1/2 cups shredded hash browns
• Salt and pepper to taste
• 8 ounces cream cheese
• Zest of one lemon
• 2 tablespoons milk
• 1/4 cup peas

Instructions

Combine hash browns with salt and pepper. Spray 36 mini muffin tins with cooking spray. Push hash browns down into each tin, so that it creates a nest shape.

Beat cream cheese, with hand mixer, until light and fluffy. Beat in lemon zest and milk. Pipe cream cheese mixture into cooked nests. Top with peas.
