Vegetable Tofu Stir Fry

This Stir fry really is amazing! It only takes a few minutes to whip up, but it tastes like you’ve been working on it for hours.

Vegetable Tofu Stir Fry

Active Time: 30 minutes            Total Time: 30 minutes       Yields: 6 servings

Ingredients

  • 2 tablespoon peanut (or other) oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 head broccoli, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 orange bell pepper, chopped
  • 1 (18 ounce) package extra firm tofu, cubed
  • 1⁄2 cup hot water
  • 1 tablespoon vinegar
  • 2 tablespoons soy sauce
  • 1⁄2 cup peanut butter
  • 1 1/2  tablespoons molasses
  • cayenne pepper, to taste
  • 3 cups cooked rice

Directions

  1. In a small bowl, combine peanut butter, hot water, vinegar, soy sauce, and cayenne pepper. (Don’t worry if sauce is not entirely blended. Heat will melt the peanut butter into a smooth texture when added to wok.).
  2. Heat 1 tbsp oil in large skillet or wok over medium-high heat. Cook tofu for about 5 minutes, until golden brown on all sides. Remove from wok and set aside.
  3. Add more oil to wok and saute onion and garlic until brown.
  4. Add broccoli and pepper. Cook for 10 minutes, until soft.
  5. Add the tofu.
  6. Pour peanut sauce over the mixture. Simmer 3-5 minutes.
  7. Serve over rice, and enjoy!
