Vegetable Tofu Stir Fry

Ingredients
- 2 tablespoon peanut (or other) oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 head broccoli, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 orange bell pepper, chopped
- 1 (18 ounce) package extra firm tofu, cubed
- 1⁄2 cup hot water
- 1 tablespoon vinegar
- 2 tablespoons soy sauce
- 1⁄2 cup peanut butter
- cayenne pepper, to taste
- 3 cups cooked rice
Directions
- In a small bowl, combine peanut butter, hot water, vinegar, soy sauce, and cayenne pepper. (Don’t worry if sauce is not entirely blended. Heat will melt the peanut butter into a smooth texture when added to wok.).
- Heat 1 tbsp oil in large skillet or wok over medium-high heat. Cook tofu for about 5 minutes, until golden brown on all sides. Remove from wok and set aside.
- Add more oil to wok and saute onion and garlic until brown.
- Add broccoli and pepper. Cook for 10 minutes, until soft.
- Add the tofu.
- Pour peanut sauce over the mixture. Simmer 3-5 minutes.
- Serve over rice, and enjoy!
