Avocado Toast
Active Time: 15 minutes Total Time: 15 minutes Yields: 1 slice
Ingredients
1 egg
1/2 avocado
1 slice white bread
salt and pepper
pine nuts
Directions
Cook egg over easy, by oiling pan and cooking egg until white is mostly cooked. Then, flip and count to ten, before taking the egg off the heat.
Toast the bread and slice the avocado.
Assemble, with the avocado slices on top of the bread, and then the egg on top of the avocado. Sprinkle with salt, pepper, and pine nuts.

I like to mash the avocado with salt, pepper, a splash of lemon juice, and some red pepper flakes..and then put the egg on top. I’ll have to try the pine nuts.
